Pesto Salmon with Potato Cauliflower Mash and Green Beans
Creamy mashed potatoes and cauliflower with pesto topped salmon and roasted green beans. Notes: *stir 2 Tablespoons pesto into mashed cauliflower and potatoes instead of olive oil. **freeze extra pesto for future use
Make Cauliflower Potato Mash

| 2 medium | yellow potato |
| 2 Tbsp. | olive oil |

Bring a medium pot of water to a boil, stir in 2 teaspoons of salt. Chop cauliflower into 1-2” chunks. Chop potatoes into 1-2” chunks.
Add cauliflower and potatoes to boiling water. Simmer until very soft 10-15 minutes. Drain well and mix in 2 tablespoons olive oil,1/2 teaspoon salt and 1/4 teaspoon black pepper and mash with a potato masher or fork.
Bake Salmon and Green Beans

Heat oven to 400F. Trim stems off green beans. Slice salmon into 2 portions. Toss green beans with 1 teaspoon olive oil and spread out on baking tray. Nestle slices of salmon amongst green beans and spread 2-3 teaspoons pesto on each piece of salmon. Bake 12 minutes.
