Hawaiian Pizza Rice Bowls
All the deliciousness of a Hawaiian pizza in a rice bowl.
Tomato Rice

| 1 Tbsp. | olive oil |
| 1 cup | long grain white rice |
| 2 Tbsp. | tomato paste |
| 1 tsp. | oregano, dried |
| 0.5 tsp. | black pepper |
| 0.25 tsp. | garlic powder |
| 0.25 tsp. | salt |
| 1.33 cup | water |
Heat oil in a small pot over medium-low heat. Stir in rice and cook 2 minutes. Stir in tomato paste and continue cooking 2 minutes.
Stir in oregano, garlic powder, black pepper and salt. Add water and turn heat to medium-high. Bring to a boil, stirring often, cook 3 minutes.
Turn heat to low, stir one last time and cover with lid. Cook for 30 minutes. Remove from heat.
Prepare Ingredients

| 0.5 lb. | farmers sausage or smokies |
| 2 | bell pepper red, orange or yellow |
| 0.5 lb. | green beans or garlic scapes |
Heat oven to 400 F. Slice farmers sausage into 1/4” rounds. Chop bell pepper and red onion into 1” squares. Chop green beans (or garlic scapes) into 1” pieces.
Bake Sausage and Vegetables

| 2 Tbsp. | olive oil |
| 0.25 tsp. | salt |
| 0.25 tsp. | black pepper |
| 1 14 oz. can | pineapple |
Toss sausage, peppers, onion and garlic scapes on baking tray. Season with salt and pepper. Bake 15 minutes.
Add pineapple, toss everything around, add pineapple and bake another 10 minutes, until sausage is browned and starting to get crispy.

| 1 | jalapeño |
| 0.5 bunch | cilantro |
| 1 | lime |
Thinly slice jalapeño (remove seeds for less heat). Roughly chop cilantro. Top rice with baked sausage and vegetables. Top with jalapeño, cilantro and a squeeze of lime juice.
