Roast Chicken and Vegetables with Hempseed Caesar Dressing
A nutritious spin on the classic chicken caesar. Chicken, yams and broccoli roasted with a savoury seasoning mix, tossed with romaine and a hempseed caesar dressing.
Seasoning mix

| ½ tsp. | oregano, dried |
| ¼ tsp. | garlic powder |
| ¼ tsp. | paprika |
| ¼ tsp. | smoked paprika |
| ¼ tsp. | black pepper |
| 1 pinch | cayenne |
Mix in a small bowl.
Prepare Ingredients

| 1 small head | romaine |
| 2 medium | yam |
| 1 small head | broccoli |
| 2 small | chicken breast |
Heat oven to 425F. Chop romaine into bite sized pieces. Peel and chop yams into 1/2” pieces. Chop broccoli into 1/2” pieces - peel stem if tough. Cut chicken into 1/2” pieces.
Bake Chicken and Vegetables

| 2 Tbsp. | olive oil |
On a large baking tray toss chicken and vegetables with olive oil and seasoning mix.
Bake 15 minutes , toss everything around and bake another 10-15 minutes , until yams and chicken are cooked through.
Make Dressing

| 6 Tbsp. | hemp seeds |
| ¼ cup | water |
| 3 Tbsp. | nutritional yeast |
| 2 Tbsp. | capers |
| 1 Tbsp. | grainy dijon mustard |
| 1 Tbsp. | olive oil |
| ½ tsp. | garlic powder |
| ¼ tsp. | salt |
| ¼ tsp. | black pepper |
Blend ingredients until smooth in blender, food processor or with immersion blender.
