Orange Beef and Broccoli

Orange Beef and Broccoli

Fresh orange juice makes this sauce fresh and fragrant. A simple nutrient dense one pan meal.

1 cup short grain white rice
1 ⅓ cup water
3 medium orange
2 clove garlic
2 inch ginger
2 Tbsp. tamari or soy sauce
1 Tbsp. cornstarch
2 tsp. sriracha or chili paste
2 Tbsp. water
1 medium yellow onion
1 medium head broccoli
½ bunch green onion
1 Tbsp. olive oil
½ cup ground beef
1 tsp. five spice powder
Serves 2-3

Cook Rice

1 cup short grain white rice
1 ⅓ cup water

Rinse rice and drain well. Place in a pot with water and medium-high heat. Once boiling, stir one last time and cover with a lid. Reduce heat to low and let cook 25 minutes, or until rice is cooked.

Make Sauce

3 medium orange
2 clove garlic
2 inch ginger
2 Tbsp. tamari or soy sauce
1 Tbsp. cornstarch
2 tsp. sriracha or chili paste
2 Tbsp. water

Zest 2 oranges (about 1 tablespoon). Squeeze juice from 2-3 oranges (1 1/2 cup). Mince garlic and ginger. Whisk ingredients together.

Prepare Ingredients

1 medium yellow onion
1 medium head broccoli
½ bunch green onion

Dice onion. Chop broccoli in to 1/2” pieces (bite sized). Thinly slice green onions.

Cook

1 Tbsp. olive oil
½ cup ground beef
1 tsp. five spice powder

Heat oil in a large pan over medium heat. Add onion and cook until starting to brown, about 6-8 minutes.

Add beef and continue cooking, breaking apart as you go, until browned 10 minutes .

Add Chinese five spice, broccoli and sauce and cook about 5 minutes , until broccoli is tender and sauce has thickened.

Serve

Serve over rice and garnish with green onions.
