Mediterranean Tuna and Orzo Salad
A quick pasta salad with fresh mediterranean flavours.
Prepare Ingredients

| 1 medium | bell pepper red, yellow, orange |
| 1 cup | cherry tomatoes |
| 4 | green onion |
| ¼ cup | kalamata olives pitted |
| 1 cup | parsley |
| 1 can | tuna packed in water |
| ½ | lemon |
| ⅓ cup | feta cheese |
Prepare the following ingredients and place in a large bowl. Dice bell pepper. Slice cherry tomatoes in half. Thinly slice green onions Slice olives. Finely chop parsley. Drain and flake tuna into bite sized chunks. Squeeze juice from lemon. Crumble feta.
Cook Orzo

| 1 cup | orzo |
Bring a medium pot of water to a boil. Stir in 2 teaspoons salt, then add orzo. Cook according to package directions, or until tender about 6-8 minutes, stirring occasionally. Drain.
Assemble Salad

| 2 Tbsp. | olive oil |
| ¼ tsp. | salt |
| ¼ tsp. | black pepper |
Add orzo to bowl with vegetables and tuna. Stir in olive oil, salt and pepper.
